Where does mozzarella come from?

Mozzarella originated in southern Italy, particularly the Campania region, where it has been made for centuries, first from buffalo milk and later from cow’s milk too. It’s a pasta filata cheese: the curd is heated, then stretched and shaped by hand, a technique that gives it its signature stringy texture.

What’s the difference between mozzarella, burrata, and mozzarella di bufala?

Fior di latte mozzarella is made with cow’s milk, while mozzarella di bufala uses buffalo milk, which is richer and gives it a stronger flavor and creamier texture. Burrata is a mozzarella pouch closed around a heart of cream and shreds of pasta filata: that flowing center is what sets it apart.

And what exactly is stracciatella?

Stracciatella is that creamy heart found inside burrata: shreds of pasta filata mixed with fresh cream. You can also find it sold on its own, to spread on bread or add to a salad or pizza at the end of cooking.

How do you choose good mozzarella when shopping?

Good mozzarella should feel soft to the touch, slightly moist in its liquid, never rubbery. Check the ingredient list: the shorter it is (milk, starter culture, salt, rennet), the better. DOP labels (mozzarella di bufala campana) or STG (traditional mozzarella) are good markers of quality.

How do you cook mozzarella so it stays stringy?

Mozzarella doesn’t handle long or very hot cooking well, which turns it rubbery instead of melting. On a pizza, add it near the end so it melts without drying out. To enjoy it cold, in a caprese salad for example, take it out of the fridge a little before serving so it regains all its softness.

What are the ingredients in real mozzarella?

Traditional mozzarella contains very few ingredients: milk (cow’s or buffalo’s), lactic ferments, rennet, and salt. That simplicity is exactly what makes the difference in taste between industrial mozzarella and artisanal mozzarella.

Can you keep mozzarella for a long time?

Fresh mozzarella doesn’t keep for long, just a few days in the fridge in its liquid, and it’s best enjoyed soon after opening. Unlike aged cheeses, it isn’t made to age: it’s a fresh cheese, meant to be savored without waiting.
